Healthy Eggs and Roasted Veggies

This meal is filling, low in calories, and delicious!

Ingredients:

  • 2 Eggs
  • Handful Spinach
  • Two slices of Ham
  • 5 Carrots
  • Bundle of Brussels Sprouts
  • Tbsp Oil, Salt, Pepper

Peel the carrots, wash the sprouts, and chop them

Drizzle oil on the veggies, place on a baking sheet and sprinkle with salt and pepper

Roast in the oven at 375 degrees Fahrenheit for 40 minutes

Meanwhile, cook eggs in a pan, add spinach and ham

Combine on a plate!
